In Bihar's Samastipur, Why 'Salty' Jalebi Is A Go-To Snack
A shopkeeper who sells salty jalebi said that his parents started this business 18 years ago.

Indians who are known to have a sweet tooth relish jalebi with or without any occasion. The dish is commonly available everywhere. Today, many varieties of jalebi have started coming into the market, which is gaining attention. Similarly, salty jalebi, which is available in Samastipur, Bihar, is now making headlines.

According to reports, in rural languages, this salty jalebi is called Jhambha. In Samastipur, it is not available at high-end restaurants but can be easily found at roadside shops. The taste of this jalebi is quite different and unique.

A shopkeeper Shivam Kumar said that to make a salty jalebi, one needs gram flour, baking soda, chilli powder, cumin powder, turmeric powder, black salt, etc., which are thoroughly mixed in water. Then the solution is poured into the form for making jalebi and filtered in hot oil. After this, crispy, salty jalebis are ready which people like to eat with tea or as an evening snack.

Shopkeeper Kumar further said that his parents started this business 18 years ago. But his father went out of the state to earn more. After this, he and his mother took over the business and have been running it very well. He added that the taste of jalebi made here is not sweet but salty. He prepares it for the same company that makes sweet jalebis. Every day, he reaches Belsandi Tara Chowk, sets up shop on the roadside and sells the jabebi.

The demand for this salty jalebi is so high that about 400 pieces can be easily sold every day. Shivam shared that he works at his shop only from 3:00 p.m. to 7:00 p.m. His mother prepares it while he takes care of selling it. These jalebis are sold at Rs 3 per piece.
