If you're playing Pokémon Sword or Shield and having trouble catching Gossifleur, this wikiHow will give you some advice.
Steps

Stock up on Pokéballs. Gossifleur has a relatively high Catch Rate, so you should be able to use regular Pokéballs and/or Great Balls to try and catch it. However, you'll want to bring multiple Pokéballs with you, in case your first attempt at catching Gossifleur is not successful. If you'd like, you can also bring a Quick Ball with you to try and catch Gossifleur right away, before starting to attack. Quick Balls tend to work best if they are used when an encounter first begins.

Learn what types of moves Gossifleur is weak to. As a Grass-type Pokémon, Gossifleur is weak to Poison, Fire, Ice, Bug and Flying-type moves. It's a good idea to bring at least one Pokémon that knows at least one of these types of moves with you to help make catching Gossifleur easier. Gossifleur is not immune to any types of moves, but it does resist Water, Electric, Ground and Grass-type moves. Be sure to keep this mind, as it may take longer to catch Gossifleur if you decide to use Pokémon who know these types of moves, since they won't do as much damage.

Know where Gossifleur can be found. In Pokémon Sword and Shield, Gossifleur can be found on Routes 2 and 3, and at the Motostoke Riverbank in the Wild Area. You also have a chance to find Gossifleur in Max Raid battles at the Dappled Grove, Stony Wilderness, Bridge Field and Giant's Mirror (which are also located in the Wild Area).If you have the Crown Tundra Expansion Pass,you also have a chance of encountering Gossifleur at Ballimere Lake. Gossifleur is available as a hidden encounter and a curry encounter on Route 2. To find it as a curry encounter, you'll need to set up a Pokémon Camp on this Route and prepare a curry. It may take awhile, but eventually, wild Pokémon should appear, and one of them may be Gossifleur. You'll need to go across the lake to find it as a hidden encounter, which means you'll need to have upgraded your bike. This can be done by progressing to Route 9 and helping a man who is being attacked by Team Yell Grunts. Gossifleur is a visible encounter in the grass on Route 3. Gossifleur is available in sunny weather at the Motostoke Riverbank, and it is a visible encounter. If you're looking for Gossifleur at Ballimere Lake, it is available as both a hidden and visible encounter during sunny weather. Gossifleur is in both the Common and Rare Pools for Max Raid battles at Den C at Bridge Field, the difference between them being a Gossifleur found in the Common Pool will likely be lower level. Den C is located further back in Bridge Field right near the path going towards the Stony Wilderness. This is also the case for the Giant's Mirror, where Gossifleur can be found in Den E, which is located near a cliff, and the Stony Wilderness, where Gossifleur can be found in Den J, which is located near a small hill towards the back of the area. Gossifleur is in the Rare Pool at Dappled Grove, and can be found at every Den except Den B, which is located close to the middle of Dappled Grove.

Head to one of these locations. Once you do, walk around in the area until you encounter a Gossifleur, or wait through a few Max Raid battles and eventually, you should encounter a Gossifleur. Gossifleur's silhouette is small, with a flower shape on its head and leaf shapes coming out of its back. When you're trying to encounter it in a Max Raid battle, you'll know you've come across one if this is what you see.

Weaken the Gossifleur's health to around half or less. This can help make catching it easier. Once its health is low enough, try throwing a Pokéball to catch it. You may need to try a few times, but eventually, you should catch Gossifleur. Be careful if you decide to use moves that have a chance of poisoning or burning a Pokémon. If successful, these moves can cause a Pokémon to slowly lose health, and eventually faint. If this happens, you'll need to find another Gossifleur. To lessen the likelihood of this happening, you may instead want to opt for a move like False Swipe, which is guaranteed to leave the Pokémon it is used on with at least 1 HP.

Add Gossifleur to your party, or send it to a box.
