Lemon salt is what is sounds like––salt with a touch of lemon flavor. It's ideal to have with snacks and to add to dishes that need a lemony salt flavor. This recipe is an inexpensive way to create what some may view as a gourmet food product, while others just view it as a great way to meet a crazing for something salty with a lot of sour mixed in.

Measure 1 cup of lemon juice, and 2 tablespoons of salt together in a small bowl.

Place the lemon juice and salt in a pan and boil. After about 2 minutes of boiling, a white/yellow crusty substance will start to form and float on the top.

Scrape off the crust with a spoon.

Place the crust in a clean bowl.

Continue to boil. Once again, stop and scrape off the crust.

Keep the process going. After a while, there will be nothing left, except for the crust.

Drain all of the juice from the crust. Let it dry on a paper towel.

Put the crust, now dry, in a small container.

Eat little by little, or save to put on top of flavorless crackers. It can also be used in your cooking, where you need a salty and lemony flavor at the same time.
