Garlic has become an essential part of most of the Indian food preparations as it adds flavour to dishes. Apart from being an inevitable part of every kitchen, garlic is also known for its numerous health benefits. Allicin, the active compound found in garlic that also gives it its aroma, has several healing properties. However, at times the over cooking and wrong use of garlic in dishes can reduce its health benefits. A few simple steps while cooking can help to preserve the healing properties of garlic without affecting the taste or the flavour of the dishes.
In a recent Instagram post, nutritionist Moomal Asif shared ‘the 10-minute garlic rule’ while cooking to keep its health benefits intact. Sharing details about the same she wrote, “Did you know that two minutes in the frying pan destroys all the health benefits of Garlic?"
She continued by writing that garlic has a well-deserved reputation for being healthy. The antioxidant content is high, and it has potent antiviral, antimicrobial, and anti-inflammatory properties. It also inhibits the enzymes lipoxygenase and cyclooxygenase, the enzymes which produce thromboxanes and prostaglandins, which cause inflammation.
According to Asif, when heat is applied to garlic, the most active ingredient becomes almost completely deactivated. She also added that by making one simple change, all the health benefits of garlic can be kept intact.
“Crush, chop or mince garlic and keep it away from heat for 10 minutes. During this time the maximum allicin is created and stays intact during cooking. You can then fry, saute, bake to your heart’s content and still get all its medicine," suggested the nutritionist.
