Easter marks the resurrection of Jesus from the dead. It is described in the New Testament as having occurred on the third day of his burial after his crucifixion by the Romans at Calvary c. 30 AD. It is the culmination of the Passion of Jesus, preceded by Lent (or Great Lent), a forty-day period of fasting, prayer, and penance.
People celebrate the day with the family and prepare feast on the occasion. Here are a few recipes you can try if you are planning an Easter feast:
1. Easter Egg
Ingredients:
Confectioners' sugar
Margarine
Package cream cheese
Vanilla
Peanut butter
Coconut
Semisweet chocolate chips
Butter/ margarine.
Method:
Combine sugar, margarine, cream cheese and vanilla extract.
Divide the batter in half and place each half of batter in a bowl.
Stir peanut butter into one of the bowls and coconut into the second one.
Mold the dough into egg-shapes and arrange it on cookie sheets.
Place the egg in a freezer until frozen.
Melt chocolate and butter in a double-boiler.
Dip the frozen eggs into chocolate until coated.
Place the eggs on a wax paper lined cookie sheets and keep it in the freezer till they harden.
Once hardened keep the eggs in the refrigerator.
2. Meat pie
Ingredients:
All-purpose flour
Salt
Butter
Cold water
Ricotta cheese
Eggs
Mozzarella cheese
Cooked ham
Genoa salami
Prosciutto
Parmesan cheese
Method:
Take a large mixing bowl and mix and flour.
Cut the butter into the flour and mix it throughly.
Pour cold water one tablespoon at a time into your flour.
Make a loose ball. It shouldn't be damp or wet looking.
Pull the flour into a ball and then split the ball into two equal portions.
Chill the dough in the refrigerator till you are ready to roll it out.
Flatten the dough with your hands on a lightly floured surface.
Form a circle of 12 inches in diameter.
Preheat oven to 325 degrees F.
Place the ricotta in a large mixing bowl.
Add eggs one at a time while mixing on low speed.
Add mozzarella, ham, salami, and prosciutto.
Put the crust in a pan and put the mixture over it.
Cover the with the other crust and crimp the edges.
Bake for 1 hour. Make sure the crust is golden brown.
Take it out and let it cool.
3. Roast Leg of Lamb
Ingredients:
Garlic cloves
Fresh rosemary
Salt
Black pepper
Lamb leg
Method:
Preheat oven to 350 degrees F.
Cut slits in lamb leg, enough to push slices of garlic down into the meat.
Put salt and pepper over the lamb.
Place several sprigs of fresh rosemary under and on top of the lamb.
Place a lamb in a roasting pan.
Roast for about 2 hours and make sure you do not overcook it. The meat should be slightly pink.
4. Hot Cross Bun
Ingredients:
Warm water
Butter
Powdered milk
White sugar
Salt
Egg
All-purpose flour
Dry yeast
Cinnamon
Confectioners' sugar
Vanilla extract
Milk
Method:
Take a bread maker and mix warm water, butter, skim milk powder, 1/4 cup sugar, salt, egg, egg white, flour, and yeast.
Knead for 5 minutes and add cinnamon.
Leave it in the machine till the dough doubles.
Put the dough on a floured dough and cover it.
Let it rest for 10 minutes.
Shape into 12 balls and place it on a greased pan.
Cover it and let it rise for about 40 minutes.
Mix egg yolk and 2 tablespoons water.
Brush it on the balls.
Bake the balls at 375 degrees F for 20 minutes.
Remove from pan and let it cool.
Mix confectioners' sugar, vanilla, and milk.
Using a brush make an X on each cooled bun.
